Hawaiian Chicken sandwich!! (Repost)

This Sandwich was inspired by the Hula Grill!
This is an easy flavorful dinner option for week nights or anytime.  This dish was inspired by a restaurant our family loves to eat at where we go on vacation every summer.

Ok so this is a repost but I made these the other night and they are so tasty and perfect for summer! I also don't think many/ any people were following my blog when I posted these before! ;)

Ingredients

Boneless Chicken Breasts
Lettuce
Tomato
One Large Sweet Onion
Butter or Margarine
Really good rolls!
Lawrys Hawaiian Marinade

Instructions

First marinade your chicken in your Lawrys Hawaiian marinade for at least 4 hours (overnight would be better). I do not like chicken to be very thick on sandwiches(or ever) so I always pound it out thin before I marinade it using a meat tenderizer.

Make Caramelized Onions
Half your onion and slice thinly into small slivers and saute in a pan on low with 1 TBS butter. This should take 13 to 15 minutes. They are done when they resemble a golden brown color.

Saute your chicken in a pan.  I cook mine over medium heat for at least 25 minutes. Cook one side for at least 15 minutes or until that side is golden brown. Turnover and cook for an additional ten minutes. Chicken should be firm to the touch.  I then add some additional marinade to the pan to give the chicken more flavor.

Set up a spot to assemble your sandwiches with your lettuce leaves, tomato slices, caramelized onions and rolls.  I like to place the lettuce first, followed by the chicken, then caramelized onions, lastly a tomato slice. Make your sandwich to your liking.  I served mine with onion rings and an amazingly addictive sauce which i will post on a later date.  The Hula Grill serves theirs with french fries, or white sticky rice and their signature salad.

On the lighter side: Skip the roll and serve only the chicken with a side salad.

Have a fab weekend!

What are some of your favorite summer recipes?
