Funfetti Cupcakes

Funfetti cupcakes are my absolute favorite variety to make. My boys love them too. There is just nothing more fun. They are perfect for parties or any day of the week if you live in my house! Generally I use the pillsbury boxed funfetti cake mix....because when you have three kids you have to save yourself some time somewhere right? Plus it is good cake and its pretty much guranteed to bake perfectly as long as you don't let it burn. Which is not always the case when you bake from scratch (at least for me anyway). The icing I did make. It is marshmallow buttercream frosting and it is amazing! The best frosting I have ever tasted. It especially seems to compliment funfetti cake. Marshmallow Buttercream Frosting
Ingredients
1 Cup room temperature butter
1 (7 ounce) jar marshmallow fluff
2 Cups confectioners sugar 
1 tsp vanilla extract

Instructions
Cream the butter until light and fluffy. 
Add Marshmallow Fluff, and whip two minutes.
Add confectioners sugar, and beat for two more minutes.
Add the vanilla extract.



You really have to try this icing! You will not regret it I promise. It is my official go to icing if I don't purchase it from work. I used it for my son Cole's 3rd birthday cake as well which was a large two tiered cake and it held up really well. I wish i could say that I used her funfetti recipe successfully but when I tried to make it for my son's birthday I was running low on sleep due to all the cooking I had already done for the party and i overlooked the fact that my baking powder was expired. Needless to say that was a disaster. I ended up staying up almost all night rebaking everything with my trusty boxed cake mixes haha, thank god for pillsbury and 24 hour grocery stores. Now I know I won't ever make that mistake again and hopefully I've saved you from ever making that mistake yourself after reading this, because it was not a fun night.
