When I was younger almost every time I ate at a restaurant I would order Fettuccine Alfredo! Olive Garden, Carrabas, Fridays, Macaroni Grill you name it that's what I would choose. I try to moderate how much I consume that dish anymore because its not the healthiest, but I still love to have it now and then. This is a really easy and delicious version of Alfredo chicken pasta! Perfect for a week night because the recipe is very simple. I really love it with chicken or just the pasta on its own. Here's what you'll need
Ingredients
4 Chicken breasts
Olive Garden salad dressing(You can buy it at Sam's Club)
16 oz Mini Penne pasta or Fettuccine
A jar of Classico Alfredo sauce
Small jar Diced Tomatoes
Olive Oil
1/4 C chopped sweet onion
Minced garlic
Cook your pasta according to package directions.
Pound out your chicken using a meat tenderizer and trim off any fat. Marinade your chicken in about half the bottle of your Italian dressing for at
least 4 hours (preferably overnight).
Saute your chicken in a pan. I cook mine over medium heat for about
25 minutes. Cook one side for at least 15 minutes or until that side
is golden brown. Turnover and cook for an additional ten minutes.
Chicken should be firm to the touch. Set aside
While your chicken is cooking place about two TBS of olive oil in a pan over med heat. Add 1/8 tsp of minced garlic, your tomatoes(drained), and sweet onion. Saute until tender.
Mix your Pasta into the pan with the tomatoes. Pour your jar of alfredo over the pasta and stir to combine. Place your chicken on a chopping board and cut into thin strips. Place the chicken on top of your pasta. Top individual servings with some good Parmesan cheese and serve immediately. Enjoy!
