                                                                    Cheesy Taco Potatoes!

This side dish is inspired by Taco Bell's Cheesy Fiesta Potatoes.  If you've ever had the cheesy potatoes from Taco Bell you know they are to die for.  This is some serious comfort food.  To be honest we actually make this as a main dish, because it is just too filling to have with anything other than a salad or vegetable.  I also happen to love potatoes a little more than the average person though so that's something to consider lol.  I suppose you could have a very small serving if you intend to serve it as a side dish, but really good luck with that because they are beyond delicious!

Here's what you'll Need
5-6 Gold Potatoes(Yes they have to be Gold)
Extra Virgin Olive Oil
Taco seasoning(Prepacked is fine or if you have homemade) 
One TBS minced sweet onion
Sour Cream
Scallions
Gehls Cheese sauce(Purchase it in the chip section!)


Instructions

1.Preheat your oven to 350 degrees
2. Peel your potatoes and chop into small cubes and place in an oven safe dish.
3. Finely mince your onion(1 TBS) and mix in with the potatoes.
4. Drizzle Olive Oil over top of the potatoes.
5. Mix in about 2 tsp of taco seasoning(Depending upon how spicy you want your potatoes to be)
Careful not to use too much
Mix it until the potatoes seem evenly coated.
Roast your potatoes in the oven for an hour uncovered. Make sure to mix them around half way through.
Top individual servings with Gehls Cheese Sauce, Sour Cream, and Chopped scallions.
Try not to eat the entire serving dish worth, because they are seriously addicting!
